Heat a non-stick frying pan over medium-low heat. Add the 2 tablespoons of pesto and increase to medium heat and cook for 1 minute.
Crack the eggs over the pesto and season with salt and fresh cracked pepper. Cook the eggs to your desired doneness. (I prefer Sunnyside Up with the yolk still runny.)
Top each slice of Sourdough Toast with 1/4 avocado. Slice the avocado thinly or mash the avocado.
Top each piece of toast with 1 egg and garnish with crushed red pepper flakes, if desired. Serve immediately.
