  • 2 tablespoons Pesto
  • 2 Large Eggs
  • 1/2 Avocado
  • 2 slices Sourdough Toast
  • Fine Sea Salt
  • Fresh Cracked Black Pepper
  • Crushed Red Pepper Flakes

Instructions

  • Heat a non-stick frying pan over medium-low heat. Add the 2 tablespoons of pesto and increase to medium heat and cook for 1 minute.

  • Crack the eggs over the pesto and season with salt and fresh cracked pepper. Cook the eggs to your desired doneness. (I prefer Sunnyside Up with the yolk still runny.)

  • Top each slice of Sourdough Toast with 1/4 avocado. Slice the avocado thinly or mash the avocado.
  • Top each piece of toast with 1 egg and garnish with crushed red pepper flakes, if desired. Serve immediately.
