Cauliflower is a staple vegetable in my house. We love to roast it (with or without parmesan cheese), steam it, grill it, and make roasted cauliflower rice. It’s one of the few vegetables that both of my kids happily eat!
Roasted Cauliflower is a low calorie side dish that pairs well with so many different healthy dinner recipes and can be easily flavored with different herbs and spices.
This method of cooking cauliflower is one of my favorite ways to serve it because roasting at high heat caramelizes the edges making them crispy with a tantalizing nutty flavor. The exterior of the cauliflower will brown quickly and lock in the the nutrients and flavor, creating a soft and almost creamy texture in the center.
You’ll find that everyone is fighting over the smaller, more browned pieces!
Serve this alongside easy main dishes like Air Fryer Meatloaf, Sheet Pan Pork Chops, Skillet Chicken and Rice, or Air Fryer Chicken Tenders without breading.

Ingredients
- Fresh Cauliflower – I have not tested this recipe with frozen cauliflower.
- Oil – Avocado Oil or Pure Olive Oil are best for roasting at higher temperatures. I don’t recommend using extra virgin olive oil when cooking or baking because it has a lower smoke point.
- Salt & Pepper – freshly cracked black pepper is always preferred and feel free to mix up your salt with a seasoned salt or my favorite – garlic salt.
- Parmesan Cheese – freshly grated from a block is the best for this recipe. It melts into the hot cauliflower and has more flavor than parmesan cheese like Kraft.

Tips for Roasting Raw Cauliflower
- When using a whole head of cauliflower, be sure to cut the cauliflower into uniform-sized pieces to ensure the cauliflower cooks evenly.
- To save time and prep quickly, use pre-cut cauliflower or cut up your cauliflower ahead of time. This will save at least 5 minutes of prep time when it comes time to cook!
- Arrange the cauliflower on the sheet pan with space between each piece with the largest side in contact with the pan. With this method, more of the cauliflower will brown and it will be less likely to steam from over-crowding.
- If you like your roasted veggies crispier and more tender, cook a little longer.

Crispy Oven Roasted Cauliflower with Parmesan Cheese
Ingredients
- 1 medium-sized Head of Cauliflower, about 2 pounds
- 1 tablespoons Avocado Oil or Pure Olive Oil
- ¼ teaspoon Fine Sea Salt
- ½ teaspoon Black Pepper, freshly cracked
- ⅓ cup Parmesan Cheese, freshly grated
- 2 tablespoons Chopped Parsley, for garnish
Instructions
- Preheat oven to 400 degrees F. Cut the cauliflower into bite-sized florets.

- Place the cauliflower on a rimmed half sheet pan. Drizzle with the oil and add the salt and pepper.

- Toss until the cauliflower is coated with the oil and seasonings. Bake for 25 minutes or until browned and tender crisp.

- Remove from the oven and sprinkle with the grated Parmesan cheese and chopped fresh parsley to serve.

Notes
- If meal prepping, divide into 4 meal prep containers and refrigerate up to 4 days.
