Ingredients and Notes
- Cottage Cheese – my favorite to use in my cottage cheese recipes is Good Culture 2% Low Fat Cottage Cheese.
- Eggs – large, whole eggs are needed for this recipe. I prefer cage-free pasture raised but any large eggs work.
- Parmesan Cheese – optional but adds flavor. Freshly grated is best because it melts into the flatbread.
- Spices – I use garlic powder and freshly cracked pepper. You can customize the spices here to really change up the flavor of the flatbread.

Tips for Making Cottage Cheese Flatbread
- Ensure you process the ingredients long enough so that all the curds of the cottage cheese are blended, and the mixture is completely smooth. I found that 45 seconds to a minute was sufficient.
- To avoid the edges from getting too crispy, spread the mixture as evenly as possible. Using a larger pan and avoiding going all the way to the edge of the pan with the mixture (keeping the flatbread in the center, not touching the rim of the pan) can also help. If the edges are crispy, you can trim the edges with a knife after the flatbread has baked and cooled to make it more pliable.
- Once cooked, allow the flatbread to cool for 5-10 minutes so that it can be removed cleanly from the parchment paper without tearing.

Serving Suggestions
This flatbread makes an excellent wrap or sandwich filled with your favorite ingredients. Start by cutting the flatbread in half at the long edge. For a wrap, simply layer the ingredients in the center of the wrap and fold the ends over.
For a sandwich, place your fixings on one half of the flatbread and fold the other side over. You can use chicken, egg, or tuna salad, make a club, BLT, or any combination of meat, cheese, spreads, and veggies for perfect low carb sandwich.
This flatbread also makes a great base/crust for a keto-friendly pizza!
For something sweet, omit the parmesan, garlic, and black pepper and use the wrap to fill with nut butter and sliced fruit or berries.

Leftovers and Storage
This flatbread recipe makes one large flatbread equal to 2 servings and is best the day it’s made.
To store any leftovers, allow the flatbread to fully cool to avoid condensation and store it in an airtight container or resealable bag for up to 2 days.

Flourless Cottage Cheese Flatbread
Ingredients
- 1 cup Cottage Cheese, 2%
- 2 large Eggs
- ¼ cup Parmesan Cheese, freshly grated (optional)
- ½ teaspoon Garlic Powder
- ¼ teaspoon Freshly Cracked Black Pepper
Instructions
- Preheat the oven to 350° F.
- Line a rimmed half sheet pan with parchment paper. If the rim of the pan is exposed after lining it, you can lightly coat the edges of the pan with coconut oil or cooking spray to ensure the flatbread can be remove cleanly if the edges come in contact with the cottage cheese mixture. Set the lined pan aside.
- Combine all ingredients in a blender or food processor.

- Blend for about 1 minute or until completely smooth.

- Use a rubber spatula to spread the cottage cheese mixture evenly across the lined pan. Note that the outer edges of the flatbread may get crispy. To mitigate this, spread the mixture as evenly as possible. You can also either avoid going all the way to the edge of the pan (keeping the flatbread in the center, not touching the rim of the pan) or plan to trim the edges with a knife after the flatbread has baked and cooled to make it more pliable.

- Place the pan in the oven and bake for a total of 28-32 minutes, or until the top is a bubbly brown, rotating the pan 180 degrees halfway through to ensure even browning.

- Remove from the oven and allow the flatbread to cool fully before removing it from the parchment paper.

- Gently peel the flatbread off the parchment paper, fill with your favorite toppings and enjoy!
