7 Day Healthy Weekly Meal Plan
This week we’re blending summer with fall comfort food for our healthy meal plan because it’s that time of year where it’s still hot, hot, hot, but we’re ready for fall.
We’re starting the week off with some Healthy Breakfast Meal Prep Sandwiches. I’m making the breakfast sandwiches on Sunday and they’ll be ready to grab-and-go for the entire work week.
I’ll be pairing them with fresh berries every morning (again, so easy!) but you could do whatever fresh fruit you want or pair it with a Greek yogurt for even more protein.
The Pesto Zoodle Salad is made with cooked chicken so I’m using my go-to: Costco Rotisserie Chicken. I’ll be using some of it for the zoodle salad and then I’ll also use it for the Thai Chicken Lettuce Wraps for lunches.
It’s such a budget saver to buy 1 chicken for $5 (already cooked!) and get multiple meals out of it.
I’ve been making Pesto Eggs for a while now (thanks TikTok!) but finally got a round to sharing the recipe earlier this week. They’re SO good and they’re making their debut on the weekly meal plan.
Stir fry, casserole, and mini meatloaf are for lunch and dinner making it easy with an emphasis on EASY. I love stir fry because it comes together so quickly.

Healthy Snacks
I prefer grab-and-go snacks and have plenty on hand for busy afternoons. I don’t like to prep a ton of snacks ahead of time because sometimes, I’m just not hungry for a snack.
This is what I like to have on hand:
- Dannon Light & Fit Non-Fat Vanilla Greek Yogurt (80 calories and 12g protein)
- Fresh Berries (strawberries, blueberries, raspberries, and blackberries
- Clementines or Seedless Mandarin Oranges
- Bananas
- Snack Size Bags of LesserEvil Himalayan Pink Salt Organic Popcorn (100 calories/bag)
- Protein Shakes – I add half of a shake to my afternoon coffee in place of any milk or sugar. My favorite is Fairlife Salted Caramel.
- Baby Carrots
- Celery Sticks
- Mini Cucumbers
- Mini Sweet Peppers
- Sugar Snap Peas
- Hummus
- Low Fat Cottage Cheese – try this Viral TikTok Cottage Cheese Queso or Edible Protein Cookie Dough!
- Lightly Salted Mixed Nuts
